Researchers at the Fraunhofer Institute in Germany trained AI algorithms using chemical compositions and aroma profiles of 16 US and Scottish whiskies. The AI was then able to predict the most prominent aroma notes and distinguish between whiskies from the two regions with over 90% accuracy.
